Description
The main role of this position is the planning and preparation of meals at the lodge for guests and staff during their trips. Specific details include: - Development of menu. - Making schedule for kitchen staff - Control food cost - Organize kitchen staff - Cooking and serving of all meals throughout the week: Breakfasts, lunches, appetizers, dinners, desserts - Planning of weekly menu items, preparation of grocery lists and management of food inventory - Purchasing and packing of weekly grocery lists for truck transport - Cleaning and maintenance of all kitchen equipment, appliances, dishes and utensils - Proper and safe use of all kitchen equipment and appliances - Keeping the kitchen and dining areas clean and tidy - Adherence to proper food preparation and service regulations, as well as specific lodge safety procedures/protocols - Must be able to work both independently or with a team in a very remote location Qualifications: - Must have current Food Safe certifications. - Experience in cooking, menu preparation . - Specific backcountry work experience and knowledge is preferred but not mandatory Possibility of long-term employement for the right candidate.
