This role is ideal for someone who is organized, reliable, eager to learn, and interested in the discipline of fine dining. The position focuses on daily prep, ingredient processing, production tasks, receiving, organization, cleaning, and supporting the kitchen team before and during service. The prep cook plays an important role in the consistency and success of the restaurant. Every sauce, garnish, portion, and component needs to be prepared with care so the team can execute at a Michelin starred level during service. Fine dining experience is an asset, but attitude, work ethic, cleanliness, consistency, and attention to detail are just as significant. Responsibilities - Prepare daily components for a 10 course tasting menu - Wash, peel, cut, portion, label, and organize ingredients - Follow detailed recipes, prep lists, portioning, and production standards - Assist with stocks, sauces, garnishes, purées, pickles, ferments, doughs, and other menu components - Work closely with the Chef, Sous Chefs, Chef de Cuisine, and line cooks - Maintain a clean, organized, and efficient prep area - Receive, label, rotate, and store products properly - Use the FIFO method to maintain freshness and reduce waste - Assist with inventory, organization, and general kitchen maintenance - Support the team during service when needed - Follow food safety, sanitation, WHMIS, and MSDS guidelines - Take pride in the details, even before the dish reaches the plate Qualifications - 1 to 2 years of kitchen experience preferred - Fine dining or prep experience is an asset, but not required - Culinary diploma or degree is an asset - Basic knife skills and understanding of kitchen organization - Ability to follow recipes and take direction carefully - Clean, organized, reliable, and eager to learn - Ability to work calmly and efficiently under pressure - Comfortable standing for extended periods - Valid Food Handler Certificate preferred - A strong interest in Asian flavours, modern cooking, and Michelin level standards Additional Note - aKin is a demanding but rewarding environment.
